I'd rather eat healthy food than take medicine. Especially when the food is both healthy and tasty, I am extremely satisfied.
Have you ever heard the expression "eating with the eyes"? A recipe that looks appetizing, you first eat it with your eyes and then enjoy its taste.
I came up with another expression – eating for the eyes. By this expression I mean that there are recipes that are not only good looking and delicious, but also extremely healthy for the eyes.
In this article, I want to share with you some recipes that I tried and that I really liked. They are simple and tasty, but most importantly beneficial for eyesight.
Carrot salad
For this recipe you will need: 2 carrots, a handful of walnuts, parsley, olive oil, and sour cream. Grate the carrots on a coarse grater. Add nuts and chopped parsley. Season the resulting dish with sour cream and olive oil.
Bean salad with cabbage
Ingredients: 1 cup of red beans, 3 cups of finely chopped white cabbage, 1 onion, 1 carrot, 1 tbsp. of finely chopped parsley and celery leaves, 1-2 tbsp olive oil, salt to taste.
Soak the beans overnight. Drain the water, place the beans in a saucepan and cover with boiling water. Cook until tender, but so that the beans are not too boiled. Drain the broth, cool the beans. Pour the chopped cabbage with boiling water and leave to cool completely. Drain and mix the cabbage and beans. Add finely chopped onions, carrots, and herbs. Stir, salt and season with olive oil. You can add a drop of soy sauce instead of salt.
Beetroot carpaccio
Take 1 large beet, 200 g of goat cheese, juice of one lemon, sunflower seeds, olive oil, spinach, pepper and salt – to taste. Bake the halved beets in the oven and then cut into thin slices. Top with cheese and sprinkle with seeds. Mix the oil and juice and pour the resulting solution over a dish. Add spinach, salt and pepper to taste.
Salmon roll
You will need 1-2 kg of salmon, a couple of lemons, 2 tbsp. of granular mustard, 1 tbsp. of olive oil, parsley, salt, pepper. Cut the fish, cut the carcass in two halves. Mix the juice of one lemon with mustard and olive oil. Marinate the fish with the resulting composition, marinating time – 20-25 minutes. Finely chop the greens, cut the second lemon into circles. Make a layer between the two halves of fish. Salt and pepper. Tie with twine and bake at 180 degrees for about 35-40 minutes. If it burns on top, cover with a sheet of foil. Serve the fish in portions.
Blueberry jelly
Ingredients for 4 servings: 1.5 cups frozen blueberries, 20 g gelatin, 3 tbsp. of sugar, 2.5 cups water. Dissolve sugar in two glasses of hot boiled water, cool to room temperature. Soak gelatin in 100 ml of cold water. Squeeze one glass of thawed berries with a spoon, stir with sweetened water and strain. Gently heat the gelatin in a water bath, stirring constantly, until completely dissolved – do not boil! Mix the strained fruit drink with the gelatinous solution. Put the remaining berries on the bottom of the portioned bowls, pour the mixture over them and put them in the refrigerator until they solidify.
